    Spend This Friday Wastin’ Away Again on National Margarita Day

    When life gives you limes, make margaritas! On Friday, Feb. 22, 2019, also known as National Margarita Day, imbibers with a love for tequila have the perfect excuse to visit local haunts and enjoy libations by sipping on some of the best margarita offerings around from Dantanna’s, Bistro Off Broad, and Park Tavern. These are the can’t miss margaritas I’ve always wanted to taste when in Houston. As if that wasn’t enough, revelers can also shake things up at home and toast to the occasion with these easy-to-follow margarita recipes that are ideal to kick off the weekend.

    Dantanna’s:

    Maestro Margarita 
    Ingredients:

    • 1 1/2 oz Dantanna’s signature blend of Maestro Dobel tequila
    • 3/4 oz Cointreau 

    Preparation: 

    1. Rim glass with salt before, if desired.
    2. 3 oz house-made sour mix (1 part fresh lime juice, 1 part fresh lemon juice, 2 parts simple syrup).
    3. Build in bar tin with ice, shake, and strain into a tall glass over ice. If you prefer crushed ice,  you can crush ice using a personal blender.

     
    Prickly Pear Margarita

    Ingredients:

    • 1 1/2 oz Don Julio Silver Tequila
    • 1 oz Prickly Pear Puree
    • 3/4 oz Fresh Lime Juice
    • 1/2 oz Agave Nectar

    Preparation:

    1. Rim glass with salt before, if desired.
    2. Build in a bar tin with ice, shake and pour into a rocks glass over ice.

     
    Mango Marga-Mosa 
    Ingredients:

    • 1 1/2 oz Avion Silver Tequila
    • 1 oz Mango Puree
    • 1/2 oz Fresh Lime Juice

    Preparation:

    1. Build in a bar tin with ice, shake and strain into a champagne glass.
    2. Top with sparkling wine (rim glass with salt or sugar before, if desired).

    Bistro Off Broad’s Jalapeño Margarita 

    Ingredients:

    • 1 3/4 oz Altos Jalapeño Tequila
    • 3/4 oz Cointreau 
    • 1/4 oz Agave Syrup
    • 2 oz Fresh squeezed OJ

    Preparation: 

    1. For the Altos Jalapeño Tequila: cut fresh jalapeño and remove seeds, stems, and ribs. Add strips of jalapeño to tequila and let it sit over night. Minimum 24 hours.
    2. Salt rim.
    3. Pour ingredients over ice and shake well.
    4. Garnish with lime and a jalapeño slice.

    Ingredients:

    • 2 oz El Jimador Reposado
    • 1 oz Triple Sec
    • Fill Sweet and Sour to brim
    • 1 oz Rose’s Lime 

    Preparation:

    Combine all the ingredients in a shaker tin with ice, shake, and strain into a glass filled with ice.

    Ingredients: 
    • 1 46 oz can Sacramento Tomato Juice
    • 2 tbsp Prepared Horseradish
    • 4 tbsp Lea & Perrins Worcestershire Sauce
    • 6 dashes Tabasco Sauce
    • 2 tsp Celery Salt
    • 2 oz Lemon Juice
    • 2 oz Olive Brine
    • 2 tsp Ground Black Pepper
    Directions: 
    1. Combine all ingredients and refrigerate overnight.
    Belle Isle Honey Habanero Bloody Mary Cocktail
    Ingredients:
    • 2 oz Belle Isle Honey Habanero Moonshine
    • 1 cup Bistro Bloody Mary Mix
    • Old Bay as needed
    • Pickled Vegetables
    • Bleu Cheese Stuffed Olive
    • Pepperoncini
    • Lime Wedge
    Directions:
    1. Rim a pint glass with Old Bay and fill with ice.
    2. Add Belle Isle Moonshine and Bistro Bloody Mary Mix.
    3. Garnish with pickled vegetables, olive, pepperoncini, and a lime wedge.

    Ingredients:
    • 1.5 oz Vodka
    • 4 oz Campbell’s V-8 Juice
    • 1 pinch Celery Salt
    • 1 pinch Ground Black Pepper
    • 1 tsp Prepared Horseradish
    • 1 six inch Stalk Celery
    • 1 8-12 count Poached Shrimp
    • 1 Strip Crisp Bacon
    • 1 Dill Pickle Spear
    Directions:
    1. In a shaker add the vodka, V-8 Juice, celery salt, black pepper and horseradish and shake with ice.
    2. Strain into a tall glass filled with ice.
    3. Garnish with the shrimp, bacon, celery and pickle.

    Ingredients:
    • 2 oz Belle Isle Honey Habanero
    • 0.5 oz Franks Hot Sauce
    • Lemon Juice
    • Lime Juice
    • Olive Juice
    • Zing Zang Bloody Mary Mix

    Directions: 
    1. Build ingredients in a tall glass over ice, stir and top with Zing Zang Bloody Mary Mix.
    2. Garnish glass with lemon wedge, lime wedge, celery, olive, a togarashi and a kosher salt rim.

    Directions:

    Rim champagne flute with melted chocolate. Finish rim with crushed candy cane. Garnish with mini candy cane.

    • 1 1/2 ounces Knob Rye
    • 1 shot of espresso
    • 1/4 ounce simple syrup
    • 2 dashes orange bitters
    • 2 dashes chocolate bitters
    • Garnish with orange twist

    Directions:

    Combine Knob Rye, espresso, simple syrup, orange bitters and chocolate bitters in a mixing glass. Strain the cocktail into a rocks glass over one large ice cube, or cubed ice. Garnish the cocktail with an orange twist.

    City Winery’s Mullin’ It Over 

    • 1 bottle of dry red wine
    • 1 orange, zested
    • 8 dried cloves
    • 2 cinnamon sticks
    • 4 dried star anise
    • 4 Tbsp honey4 oz. brandy

    Directions:

    Add all ingredients to stockpot and heat over low.  Be careful not to boil.  Continue simmering for at least 30 minutes.  Strain and serve garnished with an orange slice and cinnamon stick. This recipe works great in a crock pot.

    Scrambling around for last-minute Thanksgiving recipes? Bistro Off Broad’s Executive Chef Alex Friedman has prepared easy-to-follow recipes that are sure to impress even the pickiest folks this Thanksgiving. Ideal for any Thanksgiving Day festivity, Chef Alex Friedman has rounded up dishes both sweet and savory, including a creamy Heirloom Pumpkin Cheesecake Parfait, a flavor-packed Heirloom Pumpkin Risotto made with Sage and Pecorino Tuscano, and a savory Turkey Pot Pie with Biscuit Crust, perfect for a rejuvenated leftover turkey dish.

    Heirloom Pumpkin Risotto with Sage and Pecorino Tuscano

    Ingredients
    • Canola Oil as needed
    • 1 cup Yellow Onion, fine dice
    • 2 tbsp Fresh Sage, chopped
    • 3 cups Arborio Rice
    • 3 cups Dry White Wine
    • 3.5 cups Chicken Stock
    • 3 cups Water
    • 4 tbsp Roasted Garlic Puree
    • 4 tbsp Butter
    • 1 cup shredded Pecorino Toscano
    • 2 cups Heirloom Pumpkin, roasted and hand mashed
    • Salt and Pepper to taste, as needed
    Preparation
    1. In a large shallow pot add enough oil to coat the pan. Heat oil over medium high heat for 2-3 minutes.
    2. Add sage and fry, stirring continuously for 30 seconds to 1 minute.
    3. Add diced onion and reduce heat to medium low.  Stirring often, cook onions until translucent with no color.
    4. Add Arborio rice and increase heat and toast rice for 1-2 minutes stirring continuously.
    5. Add white wine and bring to a simmer. Reduce heat and simmer, stirring often.  Cook until the rice has absorbed 90% of the wine.
    6. Add the 3 cups of the chicken stock, stirring often, cook until the rice has absorbed 90% of the stock.
    7. Add the water and repeat the process of the wine and stock.
    8. Add the garlic, butter, ½ cup of Pecorino Tuscano and pumpkin.  Gently stirring over medium heat incorporate the butter, cheese and garlic. Try not to overly mix the rice and pumpkin.
    9. Season with salt and pepper to taste and add remaining ½ cup of stock as needed to keep the risotto creamy and not dry.
    10. Transfer the risotto to a serving dish and garnish with the remaining Pecorino Tuscano.
    11. Serve immediately.

     

    Heirloom Pumpkin Cheesecake Parfait2

    Heirloom Pumpkin Cheesecake Parfait

    Yield: 6-8

    Ingredients: 
    • 1 ¼ cups Graham Cracker Crumbs
    • 1/3 cup Melted Butter
    • ¼ cup sugar
    • 24 oz Cream Cheese, room temperature
    • 1 ½ cups Fresh Roasted Heirloom Pumpkin Puree
    • 1 cup Heavy Cream 36%
    • 1 cup Powdered Sugar
    • 1 tsp Pumpkin Spice
    • 1 tsp Vanilla
    • Whipped Cream for Garnish
    • Maple Syrup for Garnish
    Preparation: 
    1. Combine graham cracker crumbs, sugar, and melted butter in a bowl.  Distribute half the crust evenly between 6 glasses or small mason jars.  Press the crust down firmly using the back of a spoon. Set aside.
    2. In a mixer using the paddle attachment beat the cream cheese until smooth.
    3. Add pumpkin puree, cream, sugar, pumpkin spice and vanilla. Switch to the whisk attachment and beat on high for 3-4 minutes until stiff peaks form. It must be fluffy and thick.
    4. Using a spoon or pastry bag evenly distribute ½ the pie filling in to cups
    5. Evenly distribute the remaining crust and gently pack down on top of filling.
    6. Again, using a spoon or pastry bag, distribute the remaining filling into cups.
    7. Gently tap cups on the table to level the filling. Refrigerate until set 6-8 hours.
    8. Garnish with whipped cream and maple syrup. Serve immediately.

    Turkey Pot Pie with Biscuit Crust 

    Turkey Pot Pie Filling – Ingredients 
    • 2 cups Yellow Onion, medium dice
    • 2 cups Carrot, medium dice
    • 2 cups Celery, medium dice
    • 2 cups Russet Potato, ½ inch dice
    • 2 cups Peas, fresh or dried and cooked (we use Heirloom Crowder Peas from Day Spring Farms)
    • 2 lbs. Pulled Turkey Leftovers
    • 1 lb. Unsalted Butter
    • 2 cups Unbleached Flour (we use freshly milled heirloom flour from Day Spring Farms)
    • 3 qt. Turkey Stock (made from leftover picked turkey cage)
    • 2 tbsp Kosher Salt
    • 2 tsp Freshly Ground Black Pepper
    • More Salt and Pepper as needed
    Turkey Pot Pie – Preparation
    1. In a large sauce pot melt butter over medium heat.  Once the butter is melted add the onions, celery, and carrots.
    2. Sweat over medium heat until onions are translucent. Lightly season with salt and pepper.
    3. Add flour and mix until flour and butter are fully incorporated, and the vegetables are coated.
    4. Continue to cook for 2-3 minutes stirring continuously.
    5. Slowly add stock while whisking. Be sure that the roux is fully dissolved into the stock and no lumps have formed. Add the potatoes.
    6. Increase heat to medium high and bring to a slight boil.  Stir often to be sure the bottom doesn’t stick or scorch.
    7. Continue to cook until the potatoes are fork tender and the sauce has thickened.
    8. Add the turkey and the peas. Simmer for an additional 5 minutes.
    9. Season with salt and pepper, adjust as needed.
    Buttermilk Biscuits

    Yield 45-50 biscuits

    Buttermilk Biscuits – Ingredients
    • 16 cup AP unbleached Day Spring Farm Flour
    • 2 lbs. Sparkman’s Cream Valley Unsalted Butter, Small Diced and Very Cold
    • 5 tbsp + 1 tsp baking powder
    • 1 tbsp + 1 tsp baking soda
    • 4 tbsp salt
    • 8 cups Sparkman’s Cream Valley Buttermilk, Very Cold
    Buttermilk Biscuits – Preparation
    1. In a large stainless-steel bowl mix all dry ingredients
    2. Add butter and cut into the flour using a pastry cutter. Cut until butter is peas sized.
    3. Add buttermilk and mix by hand until dough forms. Be careful not to over work.
    4. Using a 3-inch biscuit cutter, work quickly to cut and tray biscuits on a parchment paper lined sheet pan. Be sure to place biscuits so that they touch.
    5. Freeze biscuits overnight.
    6. Preheat oven to 400 degrees high fan convection or 425 degrees non-convection.
    7. Bake biscuits for 8-10 minutes rotate and bake for an addition 8-10 minutes or until the center biscuit has reached an internal temperature of 204 degrees.
    8. Cool and reserve for service.
    Final Preparation
    1. Pre heat oven to 400 degrees.
    2. Place pot pie filling in a casserole.
    3. Bake for 7-10 minutes or until filling begins to boil.
    4. Remove from oven and cover the top of the casserole with biscuits. Pushing the biscuits down slightly into the filling.
    5. Bake for an addition 5-7 minutes or until filling is boiling around the biscuits.
    6. Serve immediately.

     Ingredients:

    1/4 oz Yellow Chartreuse

    1/2 oz Creme de Cassis

    2oz Silver Tequila

    1oz Lime Juice

    1/3 oz Fresh Ginger Syrup

    1 Egg White

    3-4 Dashes Angostura Bitters

    Instructions:

    Add all ingredients except egg white and bitters to a shaker and shake with ice.  Strain into a clean shaker, also add egg white, and dry shake vigorously.  Double strain into a coupe.  Finally, garnish with a freeze dried raspberry and add your Angostura Bitters design.

    3/4 Part Silver Rum

    3/4 Part Cognac

    1/4 Part each of Pineapple Juice, Cranberry Juice and Blueberry Juice

    1/16 Triple Sec or to taste

    Garnish with Lime Wheel

    Instructions:

    Combine fruity red wine, silver rum, cognac, pineapple juice, cranberry juice, blueberry juice and triple sec into a shaker tin. Shake and strain into a glass over ice. Finally, garnish with a lime wheel and enjoy!

     Instructions:

    1 1⁄2 oz Sauza Tres Generaciones Plata

    4 oz Fresh Squeezed Orange Juice

    1⁄2 oz Filthy Black Cherry Syrup

    Instructions:

    Combine Sauza Tres Generaciones Plata and fresh squeezed orange juice into a shaker tin with ice. Shake, then pour into a rocks glass. Finally, drizzle the Filthy Black Cherry Syrup over the top and garnish with an orange slice and black cherry.

    Southern Kitchen’s Cupid’s Cranberry Fizz

    Serves: 6

    Hands On Time: 30 minutes

    Total Time: 1 hour and 0 minutes

    Ingredients:

    1 Cup Water

    1 Cup Sugar

    2 Pods Star Anise

    1 Teaspoon Kosher Salt

    1/4 Cup Cranberries Angostura Bitters

    1 Bottle chilled sparkling wine, such as Prosecco, Cava or Champagne

    Instructions:

    In a small saucepan, combine the water, sugar, star anise and salt, and bring to a simmer over medium heat. While the syrup is heating, use the tip of a paring knife to pierce the center of each cranberry, if you do not have one of this knives you can buy it at https://viebelles.com/. Add the cranberries to the syrup mixture, reduce the heat to low, and gently poach until tender, 10 to 15 minutes. Remove from the heat, transfer the syrup mixture to a medium bowl and refrigerate until cold. Place four cranberries in the bottom of each Champagne flute, along with a barspoon of the syrup. Finally, add three dashes of bitters to each flute, then top with sparkling wine and serve.
