    Spend National Ravioli Day at The Shed at Glenwood

    Spring is in the air and in the kitchen of The Shed at Glenwood. In honor of The Shed’s new spring menu and National Ravioli Day on Wednesday, March 20, 2019, The Shed’s Executive Chef Quintles Swain has prepared an easy-to-follow Butternut Squash Ravioli recipe made with black truffle zest, morel mushrooms, aged parmesan, oregano, and butternut squash puree, that will have any pasta aficionado coming back for seconds all season long.

    The Shed at Glenwood’s Butternut Squash Ravioli Recipe: 

    Ingredients: 

    • 7 Butternut Squash Filled Raviolis
    • 1 tablespoon Grape Seed Oil
    • 5-7 Morel Mushrooms
    • 1/2 teaspoon Minced Garlic
    • 1/3 cup of Heavy Cream
    • 2 tablespoons Butternut Squash Puree
    • Salt and Pepper to taste
    • 1 teaspoon Chopped Oregano
    • Black truffle Zest
    • Aged Parmesan
    • Micro Parsley, garnish

    Instructions:

    1. Place a stock pot filled with water and a pasta strainer on the back burner over med-high heat.
    2. When water comes to boil place seven ravioli in pasta strainer, and cook until tender.
    3. In a sauté pan over Medium heat add grape seed oil and minced garlic to the pan and sweat for 1 minute.
    4. Add heavy, oregano, butternut squash puree and salt/ pepper to taste to make you sauce, cook at Medium heat until it thickens.
    5. Add ravioli, toss in pan with sauce then transfer to pasta bowl.
    6. Finish by garnishing with shaved parmesan, black truffle zest, and micro parsley.

    The Shed Introduces International Dinner Pairings Every Saturday in March

    In honor of the new month, The Shed at Glenwood, a cozy locale best known for its comfortable ambience, locally sourced ingredients, fine wines, and spirits, will offer an international chef’s special and pairing each Saturday throughout entire month beginning March 2, 2019.

    Goodbye February and hello, March!

    Guiding diners through an international culinary adventure, Executive Chef Quintles Swain’s international pairing specials will kick off with Germany, where guests can enjoy traditional Sauerbraten and Spätzle paired with Spaten Lager on Saturday, March 2nd. Next, diners will be taken to Italy to enjoy Osso Buco paired with Valbella Amarone vino on March 9th, followed by tastes of Spain with Trout and Salmorejo, paired with Rivarey Rioja Blanco on Saturday, March 16th, and then, France for Coq au vin paired with Two Birds Carignan wine on March 23rd.

    Finally, seafood lovers can dive into an American spring and summer staple, Black Cod and Romesco, paired with Zaca Mesa Viognier wine out of sunny Santa Barbara, California on Saturday, March 30th. Available for dinner beginning at 4 p.m. every Saturday in March, The Shed’s international entrée with a speciality wine or beer pairing is $25 per person.
